With Microsoft Edge extensions you'll need to look throughout different places on your hard disk to find left-overs for an uninstalled addon/extension since it evidently isn't good at all removing left-overs - this I found out after uninstalling a different adblocker, most of it was still intact after I had uninstalled it.

Another option is perhaps reinstall that addon, then download Geek Uninstaller Free. In Geek Uninstaller Free click 'View > Windows Store Apps', then uninstall it from within Geek Uninstaller Free which should remove the left-overs. Now if that doesn't work you'll be left with trying to find all those left-overs manually in places like ProgramData, etc.
